Unlike normal flour, Italian type ‘oo’ is all natural, additive free – made of the most superior wheat available on the global market, Milled slowly & extra fine for high water absorption. This results in a lighter, more easily digestible dough (due to higher quality protein and gluten). A “slow” 72-hour dough rise process results in the ideal pizza crust which is thinner in the middle, with a rim that balloons slightly to give it that all important crunch.
